TORONTO, February 10 2016 – Maple Leaf Tavern today announces that Executive Chef Jesse Vallins, with Binh An Nguyen and Jonny O’Callaghan sharing Chef de Cuisine roles, form the chefing talent for the launch of Leslieville’s hotly anticipated tavern concept restaurant opening spring 2016.
Jesse Vallins, one of only a handful of Canadians who boasts being certified as both sommelier and a cicerone, joins with his approachable yet refined cooking style from The Saint Tavern and previously Trevor Kitchen. Binh An Nguyen’s experience takes in an apprenticeship under Ren Mercer and Michael Potters at The Spoke Club, Hawthorne, The Beverley Hotel and Tacofino in Vancouver. Jonny O’Callaghan has completed stages in some of Europe’s top restaurants as well Toronto favourites like Museum Tavern and Patria.
“We have big aspirations for Maple Leaf Tavern and I think we’ve got the exact right team in place to become a world-class restaurant,” commented Todd Morgan, managing partner at Maple Leaf Tavern. “The Toronto food scene has never been more exciting than it is now and I’m looking forward to bringing fine dining in a relaxed environment to the east end”.
Slated to open in spring 2016, Maple Leaf Tavern will revive and refine the tavern experience as a neigbourhood destination. Flawlessly executed dishes will be complemented by a bold wine program that highlights old and new world discoveries. A world-class cocktail program will offer something for every palate.
